Ceres Organics Raw Cacao Nibs are certified organic cacao beans that have been fermented, sundried and roasted at low temperatures (below 47°C), then crushed into small bits. In their purest, most natural form, raw cacao nibs are without sugar and other additives.

 

Rich in antioxidants and fibre, they make a great substitute for roasted nuts or chocolate chips, without the added sweetness. Nibs add crunchiness and a subtle chocolate flavour with a touch of bitterness to baked goods and savoury dishes.

 

RAW Chocolate Bites Recipe

Healthy decadent chocolate! Sounds like an oxymoron, but it’s real. And, you can make it yourself.

Ready in 10 minutes
Makes approximately 12 pieces

 

Ingredients:

65g Ceres Organics RAW Cacao Butter
50g Ceres Organics RAW Cacao Powder
½ tsp Ceres Organics Vanilla Extract
3 Tbsp Wholesome Sweeteners RAW Blue Agave Syrup
Your choice of raw nuts, seeds, dried fruit (optional) 

You will need:
• A large saucepan with steaming hot water and heatproof mixing bowl (or bain marie)
• A mixing spatula or wooden spoon
• Chocolate moulds, ice tray or cookie Cutters

Note: Make sure all utensils are dry, water and chocolate don’t mix!

 

Preparation:

 

Place cacao butter in a heat proof mixing bowl. Melt gently by sitting the bowl over a large pan of steaming hot water.  

When the cacao butter has melted completely, fold in the cacao powder and mix to a smooth consistency.

Add the vanilla extract and agave syrup. Mix until completely blended. Remove from heat and continue to mix briskly until the mixture thickens a little.

At this stage, you can add in your optional ingredients or place them in the moulds.

Spoon chocolate mixture into moulds and allow to set slightly. Decorate with nuts, seeds or dried fruit before the putting in the freezer to set completely, about 10 minutes.

Remove chocolate from moulds, keep in airtight container, and keep in the fridge until you’re ready to indulge.

Note:  Make sure all utensils are completely dry, water and chocolate don’t mix!
