Asian Kimchi - This cheeky fermented mix of chinese cabbage, daikon radish, carrot, onion, garlic, ginger and red pepper powder goes especially well with creamy dips, eggs, meat and stir fries. For a "can’t resist appetizer", a little dob on your favourite cracker and cheese will go down a treat.
Amala Curry - This new sauerkraut combination of cabbage, cauliflower, fresh turmeric, spring onion, curry powder, chilli flakes, coriander and nigella seeds is fantastic for any foodie. Perfect with eggs for breakfast. Adds flavour and excitement to any sandwich or wrap. Great with cooked vegetables, avocados and any soup (especially pumpkin).
Helena Bay - This sauerkraut is a superb mix of cabbage, carrot, onion, garlic, ginger and a hint of chilli is superb with tacos and nachos or a perfect addition to stirfry or a steak sandwich. Fantastic when making any nut cheese. Serve with black beans, rice and avocado. Great complement for foods that pair well with garlic and ginger.
Just Kraut - Consisting of only cabbage and pink himalayan sea salt, this tangy, traditional Kraut will go well with almost any meal as a side or mixed through. The possibilities are endless. Fantastic for pesto, dips and coleslaw.
Ruby Perfection - Enhance any meal with the vibrant colour and taste of Ruby Perfection. This sweet mix of red and white cabbage with caraway seeds is the perfect first choice to introduce sauerkraut to children. Looks and tastes amazing in salads. Sprinkle with olive oil, walnuts and fresh herbs for a wonderful kraut slaw.
Wild Out West - This mixture of cabbage, coriander (leaves and seeds), parsley, juniper berries, and caraway seeds is spectacular with fish, superb in potato salad and just as delicious straight from the jar.

Krautify your Condiments:
So you get your daily dose of beneficial bacteria and good flavour
Add a tsp or two of sauerkraut or juice into your
Probiotic Mayo
3 egg yolks
1 Tbsp apple cider vinegar
1tsp sea salt
2 tsp honey
1 tsp Dijon mustard
1 cup extra virgin olive oil
1 Tbsp kraut juice
Place egg yolks in blender and blend. Add vinegar, honey, mustard and salt and blend a little more. Pour in oil slowly to emulsify. Add kraut juice. Transfer into a jar. Making sure the top is clean. Put a lid on and leave at room temperature 7 hours before transferring to the fridge.
1tsp Dijon-type mustard
Roughly 3 Tbsp Kraut Juice
½ cup extra virgin olive oil
Mix mustard and kraut juice with a fork then add olive oil in a thin stream stirring all the while with the fork until the oil is emulsified.
Can also add in finely chopped herbs.
Easy Coleslaw
2 cups plain sauerkraut
1 cup carrot grated
1 cup homemade mayonnaise
Put sauerkraut in sieve and gently squeeze out liquid. Toss sauerkraut and carrot together, add mayonnaise, combine and serve.
Devilled Eggs
4 hard boiled eggs peeled
2tsp mayonnaise
½ cup kimchi or sauerkraut
Pinch salt and pepper
Basic Avo Dip
2 avocados
½ cup sauerkraut
Touch of lemon juice
Blend together
Probiotic Guacamole
3 avocados
Lime or lemon juice
½ – 1 cup sauerkraut
3 tbsp coriander
1/2 red onion
1 tomato
2 cloves garlic crushed
Pinch of salt
Helena Bay Pesto
2 cups fresh herbs
½ cup Helena Bay Sauerkraut
½ cup olive oil
¼ cup nuts (optional)
Salt to taste
Combine herbs and nuts in a food processor and
pulse until coarsely chopped. Add olive oil and
process then add kraut and process a little more.
Season to taste.
Amala Curry Cashew Dip
This dip is full of probiotics and goes so well with a tasty vegetable platter.
Cashew butter
Amala Curry Sauerkraut Juice
Water
Mix a dollop or two of cashew butter with a generous amount of Amala Curry kraut juice.
Can also be a delicious salad dressing by thinning out with water.
Scrumptious Nut Balls (with Just Kraut) - try these:
Lemon Goji
1 cup cashews (activated if possible)
1/2 cup coconut
10 or more dates (medjool the nicest)
Juice and zest of 1 or 2 lemons
1/2 cup Just Kraut
pinch of kelp
Few tablespoons of Goji Berries
In a food processor fitted with the S blade, blend the nuts into a fine meal.Add the dates, coconut and lemon juice/zest; pulse until combined. Add in the sauerkraut and goji berries and pulse just a little more.
Roll into balls and refrigerate
Vanilla Chocolate:
1 cup almonds (activated if possible)
1 cup cashews (activated if possible)
1/2 cup coconut
1/4 – 1/2 cup raw cacao powder
10 or more dates (medjool the nicest)
1 tsp vanilla extract
1/2 cup Just Kraut
Splash of Coconut Kefir Water
Pinch of kelp
In a food processor fitted with the S blade, blend the nuts into a fine meal. Add the dates, coconut, cacao powder and vanilla; pulse until combined. Add in the sauerkraut and pulse just a little more. If you need a little more liquid add a little kraut juice or coconut kefir water.
Kimcheese
225g cream cheese
4 tbsp Kimchi
A few Tbsp of the brine
Combine in food processor and blend to achieve a creamy texture
Great over with crackers, bagels, vegetable sticks.
Kimchi Salsa
2 large tomatoes
1 small red onion diced fine
¾ cup kimchi drained
¼ cup coriander chopped fine
1 tsp lemon juice
Salt to taste
Combine all ingredients and serve.
