Sprouting assists to make more readily available inherent nutrients within the grain or seed particularly certain vitamins and minerals. This process can lead to better nutrition due to the improved bioavailability and enzyme activity that is triggered during the sprouting process. Sprouting grains increases many of the grains' key nutrients, including B vitamins, vitamin C, folate, fibre, and essential amino acids, such as lysine often lacking in grains. Sprouted grains may also be less allergenic to those with grain protein sensitivities.
