Amaranth, from a Greek word meaning ‘never-fading flower’, was a staple in the diet of the ancient Aztecs who believed it had supernatural powers. In India, it’s known as ‘rajeera’ (the King’s grain). Today, amaranth is revered in various cultures for its amazing nutrition profile, including protein and dietary fibre. Technically a seed, it’s a great choice for those avoiding wheat.
Amaranth flakes add a mild, nutty ‘malt-like’ flavour to salads, stuffing and baked goods. They also make a delicious breakfast cereal – simply soak for up to 3 minutes in water or milk, or serve hot by adding boiling water and covering for 5 minutes. Then add your favourite dried fruit, nuts and seeds.
